body | A starter is ready to bake with when it doubles within four to eight hours of a 1:2:2 feed at about 78°F, two feeds in a row. Predictability matters more than the calendar: some starters get there on day 6, some on day 12.
The moment to use it is at or just before its peak, while the top is still domed. Once the dome flattens or dips, it's past peak: still usable, a little more sour and a little weaker.
You may have heard of the float test, where a spoonful of ripe starter floats in water. It can fail a perfectly good starter, especially a stiff or whole grain one. Trust the doubling. |
