body | Cover the banneton and refrigerate it for 8 to 16 hours at 38 to 40°F. The cold slows the yeast far more than it slows flavour development, so the loaf gains taste, firms up enough to score cleanly, and waits for whenever you're ready to bake.
The poke test tells you where it stands: press a floured finger about half an inch into the dough. If the dent springs back at once, it needs longer. If it fills back slowly and leaves a shallow mark, bake. |
