Properties

KeyValue
bodyWeigh 50 g of whole wheat or whole rye flour and 50 g of water into the jar. Use water that feels neither warm nor cool, about 80°F (27°C). Stir until no dry flour is left, scrape the sides down, and rest the lid on top without sealing it. Whole grain flour carries far more of the wild yeast and bacteria you are trying to grow than white flour does, which is why we start with it. Put the jar somewhere that stays between 75 and 80°F. On top of the fridge or in the oven with only the light on both work. Then leave it alone for 24 hours.
