Properties

KeyValue
bodyIf you bake once a week, the starter lives in the fridge. Feed it, leave it out an hour or two until it's visibly active, then refrigerate. It will keep happily for a week and survive for much longer. The night before you mix a dough, take a spoonful out and build a levain: 10 g starter, 50 g flour, 50 g water. That 1:5:5 feed peaks in roughly 10 to 12 hours at 75°F, which makes it ready when you wake up. A grey liquid on top after a long stay in the fridge is alcohol from a hungry starter. Pour it off or stir it in, feed twice at room temperature, and it will be back. Pink or orange streaks, or fuzzy mould, mean start again.
